Using a cider yeast when making your own cider helps guarantee the best fermentation, turning all the sugar in the apple juice to alcohol and preventing off flavours.

Allowing wild yeasts to ferment your cider is a lot like a lottery.  Sometimes you win, sometimes you loose.  Wild yeast can cause unwanted flavours or not have the strength to convert the sugar to alcohol leading to stuck fermentations.

Instead of relying on wild yeast, pitch a commercial cider yeast. This will do all the hard work of making your cider the best it can possibly be.  

Your natural wild yeasts will still be there adding their funky flavours in the background, and will work in harmony with the pitched cider yeast, so you will end up with a unique cider, that tastes fantastic.

We have a few cider yeasts to choose from, you can even use a sparkling yeast that is usually used on sparkling wines if you want your cider to have and extra dry mouthfeel.
