Cabernet Sauvignon is the most popular red wine in the world, with the grapes being grown across the world. The grape was created in France hundreds of years ago by combining the Sauvignon blanc and the Cabernet Franc grapes to make Cabernet Sauvignon.
Cabernet Sauvignon is a dry red wine that has a medium acidity and a full body. The dryness mainly comes from the tannins which come from the grape skins. These mellow as the wine ages, so it's always best to bottle and leave for 6-12 months to condition in the bottle.
Normally you will find cabernet sauvignon comes with oak chips and this helps mellow the tannins and add extra vanilla and buttery flavours to the wine.
Because cabernet sauvignon is a child of the sauvignon blanc grape, you can expect the same green grassy, green pepper flavours coming through. But with added blackcurrant, blackberry, cherry, sometimes chocolate and usually a woody aroma from the oak too.
You may hear cabernet sauvignon shortened to cab sauv or even just cab. This wine has great ageing potential, so once you have bottled your wine kit, stow a couple of bottles away at the back of a cupboard and for get about them for a few (10) years. These could end up being the best red wine you have ever tasted.
Remember to drink responsibly as Cabernet Sauvignon tends to be on the higher end of the alcohol scale at around 13-14%ABV.
Best served at a little less than room temperature at around 16-18°C.

You will have the fermenter foaming all over the floor and walls but you will have the real quality that you want .
Made fruit wines of all types for years and on some as a hobby , had a go last year base level wine kit and so so ,a bit sweet ok if you only want to get well oiled . But this added to a kit is wow for a nearly sixty year old wine drinker just try adding half the bottle to your next 30 bottle kit you will never go back.

Have made this Grapefruit IPA as one of my regular brews, always enjoy it's refreshing and citrusy taste for a change. Best to use liquid malt extract in place of sugar for best results. Have 40 pints brewing now !
Young's Cellar 7 Pino Grigio is very simple to make and never goes wrong if you follow the instructions and have the right equipment. It only takes about a week to ferment and, if you let it mature for about a month or so, it tastes better than the average supermarket wine. I'd decided to make a port-style wine, so I was looking for a yeast with good tolerances for both sugar and alcohol (since I would be feeding the fermenting must with sugar to reach as near to 20% alcohol as I could) - and this one fits the bill.
This strain also offers the possibility of producing a higher level of glycerol, which won't go amiss.
After a month and three additions of sugar it's still bubbling away.
This is the first time I've used oak chips, but these came at a good price and were delivered swiftly
