Syphoning (sometimes written as siphoning) is a way to move your beer, wort, wine, lager, cider, etc from one vessel to another so as no air and therefore no bacteria is introduced to your liquid.

When your fermentation is finished you'll need to syphon it off the sediment to a new bucket, bottle, keg or barrel. You don't want to get air into the liquid so pouring is not advised. Therefore it is recommended that your brew is syphoned from one container to the next.

There are different types of homebrew syphon, but they all do the same thing.  With the cheap syphons like a simple syphon, you have to suck on one end to get the flow going. If you don't like the idea of sucking on the tube to start the flow of the beer or wine then buy an auto syphon, as with a couple of pumps, it gets the flow going for you. 

Just make sure your vessel of liquid is higher than the receiving empty vessel.  To stop the flow, simply raise the exit end of the syphon to the same level as the liquid in the top vessel.
